Smashed Chicken Fajita Tacos

The garden is producing more peppers than we can handle right now and I am running out of ways to use them. Turns out there are only so many stuffed peppers one can eat after all.
I am always on the hunt for new ways to use whatever the garden is producing in abundance, so when an evening scroll on TikTok turned up this recipe from Allrecipes, I was intrigued. Part smashburger, part fajita and equal parts taco, these crispy smashed chicken fajita tacos earned an immediate round of applause in this household.
Quick to make, gloriously messy and packed with peppers, they may have just earned a permanent place in the late-summer rotation.
Ingredients
- 1 pound ground chicken or turkey
- 2 tablespoons minced garlic
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon salt, divided
- 1/2 teaspoon ground black pepper, divided
- 8 (4 inch) flour tortillas
- 2 tablespoons olive oil, plus more as needed, divided
- 1 red or yellow bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 green pepper, thinly sliced
- 1/2 teaspoon garlic powder
- Toppings such as cheese, sour cream and salsa
Instructions
- Add chicken, garlic chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to a bowl and mix until well combined.
- Spread the chicken mixture evenly over the tortillas, all the way to the edges.
- Heat 1 tablespoon of oil on a large griddle or skillet over medium-high heat. Add peppers and onions and cook, stirring frequently until tender, 5 to 7 minutes.
- Season with remaining salt, remaining black pepper, and garlic powder and cook 1 more minute. Set vegetables aside.
- Working in batches if necessary, add remaining oil to hot griddle and add tortillas, chicken-side down. Cook until cooked through and browned, 3 to 4 minutes. Flip and cook, until toasted on the second side, 30 seconds to 1 minute longer.
- Divide peppers and onions among the tortillas, then fold each tortilla in half to form a taco. Add desired toppings and serve immediately.
